WINE MAKING PROCESS
The Delheim Pinotage 2022 is produced from hand-picked grapes, harvested early in the morning to preserve freshness. Fermentation occurs naturally in stainless steel tanks at low temperatures, with pump-overs conducted six times daily. Malolactic fermentation takes place partially in barrels and tanks. The wine undergoes an extensive aging process, including 18 months in 300 L French oak barrels (35% first-fill), followed by 12 months in oak (21% new) and a further 18 months in older French oak barrels before blending. This approach reflects Delheim's philosophy of a gentle, refined winemaking style for Pinotage.
