WINE MAKING PROCESS
Derbusco Cives Doppio Erre Di Franciacorta Brut is produced using the traditional method (Metodo Classico), involving a second fermentation in the bottle to create its effervescence. The grapes are hand-harvested and whole-pressed. Primary fermentation is temperature-controlled, not exceeding 20°C. Following this, the wine undergoes a minimum of 18 months of aging on its lees before disgorgement. The appellation regulations for Franciacorta DOCG are strictly followed throughout the winemaking process.
