ABOUT THIS WINE
Desejo was born out of a desire by the winemakers of Vinícola Salton to craft the definitive expression of Brazilian Merlot. They looked to the flat, sun-drenched pampas of Campanha Gaúcha, a region on the Uruguayan border characterized by granite and sandy-loam soils. Because Merlot requires ideal ripening conditions to avoid green, vegetative notes, Salton Desejo is only produced in exceptional, high-quality vintages. In late 2021, Vinícola Salton consolidated Desejo under a newly designed and highly collectible label series called the Coleção de Adega (Cellar Collection). Founded in 1910, Vinícola Salton is the oldest winery in continuous operation in Brazil.

WINE MAKING PROCESS
The hand-harvested Merlot grapes undergo de-stemming before being transferred to temperature-controlled stainless steel tanks. The process begins with pre-fermentation maceration, followed by alcoholic fermentation with daily pump-overs to extract color and structured tannins. After post-fermentation maceration, the wine is racked and undergoes spontaneous clarification. Following a second racking, malolactic fermentation, and centrifugation, the wine is aged for 12 months in a combination of American and French oak barrels. It then undergoes further maturation in bottle within the winery's subterranean cellars before final stabilization, filtration, and bottling.
