WINE MAKING PROCESS
The Dialogues 2019 is produced using an orange vinification method for the Moschofilero grape, fermented on wild yeasts in steel tanks. The winemaking process involves no additives, and the wine is subsequently unfiltered and unfined. A moderate 15-day maceration period is employed. Following fermentation, the wine undergoes aging for 18 months in old, small oak barrels. The harvest takes place at the end of September, with low temperatures noted as beneficial for aromatic wine production. Kalogris Organic Winery is committed to organic farming practices, which have been in place for 40 years, utilizing manual farming with a low energy footprint.
