WINE MAKING PROCESS
The Diemersfontein Cabernet Sauvignon 2018 was produced using grapes harvested in distinct batches, each fermented separately with varied yeast cultures. Fermentation occurred at 25°C for about five days, with a pump-over regimen every four hours. Post-fermentation, malolactic fermentation took place in stainless steel tanks and second-fill barrels. The wine then matured for 12 months in second-fill barrels.
