ABOUT THIS WINE
The 2024 Dilemma by Kapitel Zwei Wine is a dry white wine made from 100% organic Riesling, produced in Krems, Austria. The wine's name, 'Dilemma,' reflects the challenging spontaneous fermentation that began in September and concluded in early December. Kapitel Zwei, meaning 'Chapter Two,' is a project by Chris Sciacca focused on organic and sustainable viticulture, with this wine being a small-production, low-intervention offering. The grapes are sourced from the historic Ried Kremsleithen vineyard, a steep, terraced site with primordial rock and clay soils, replanted in 2022. The wine is aged for 10 months in an amphora and is unfined and unfiltered.

WINE MAKING PROCESS
The 2024 Dilemma begins with grapes harvested on September 15th. Spontaneous fermentation, initiated by wild yeasts, commenced on September 24th and concluded in early December. Malolactic fermentation also took place, finishing in early December. The wine was then aged for 10 months in an amphora on its gross lees. It is bottled unfined and unfiltered, with minimal sulfur added. The producer, Kapitel Zwei, emphasizes organic and sustainable practices, with a focus on low-intervention winemaking.
