ABOUT THIS WINE
Dobogó Pincészet was founded in 1995 in the heart of the historic town of Tokaj. The estate is co-owned by Izabella Zwack, of Hungary’s famous Zwack Unicum herbal liqueur dynasty, and winemaker Attila Domokos. The name 'Dobogó' translates to 'clippity-clop' or 'beating heart,' honoring the sound of horses' hooves striking the cobblestones as harvest carts returned from the vineyards. This boutique winery manages just 5 hectares of vineyards across premier classified sites in Mád and Tállya, focusing on organic and biodynamic viticulture. The 2018 vintage represents a classic, highly concentrated expression of Tokaj's unique volcanic terroir.

WINE MAKING PROCESS
Hand-harvested in multiple passes, only perfectly botrytised, naturally dehydrated Aszú grapes are selected. These berries are macerated in a sweet base wine for one night in a strict 1:1 ratio (1 kg of Aszú grapes to 1 liter of base wine). After gentle pressing, temperature-controlled fermentation takes place. The wine is aged for up to three years in large Hungarian oak barrels (300-liter and 500-liter casks), followed by an additional three years of bottle aging in Dobogó's historic 150-year-old underground cellar before release.
