WINE MAKING PROCESS
The Dog Point Pinot Noir 2022 is crafted using 100% Pinot Noir grapes sourced from the estate's organic vineyards. The fruit is hand-picked and hand-sorted. Approximately 25% of the grapes undergo whole bunch fermentation. Fermentation is carried out in small, open-top stainless steel fermenters using indigenous yeasts, without pumping. Following fermentation, the wine is aged for around 18 months in French oak barrels, with approximately 30% of these being new oak.
