WINE MAKING PROCESS
The Dolcetto d'Alba Autinot begins with hand-harvested grapes, which are then de-stemmed and softly pressed. Fermentation and maceration on the skins occur for approximately 5-7 days at controlled temperatures around 25°C. Following fermentation, malolactic fermentation is completed in steel tanks. The wine is then aged in stainless steel tanks, preserving its fresh fruit character. Bottling typically takes place between March and June of the following year, with a brief resting period in bottle before release.
