WINE MAKING PROCESS
The winemaking process for Enzo Boglietti Dolcetto d'Alba begins with manual harvesting of grapes from vines aged 20-50 years. The grapes are then destemmed and crushed. Alcoholic fermentation takes place in stainless steel tanks or wooden vats, utilizing wild yeast and lasting approximately seven days, with regular pumping over for extraction. Malolactic fermentation occurs spontaneously. The wine is aged for about six months, primarily in stainless steel tanks, with a possibility of brief aging in used French oak barrels. The winery practices minimal intervention, including limited use of sulfites, fining, and filtration.
