WINE MAKING PROCESS
The Dolcetto d'Alba DOC Dabbene 2022 is produced using soft crushing of the grapes. Fermentation takes place with indigenous yeasts for 8-10 days in temperature-controlled stainless steel tanks, with periodic pumping over to enhance color and tannin extraction. Malolactic fermentation follows. The wine is then stabilized in winter, filtered, and bottled in early spring. Notably, there is no oak aging, and the wine is bottled unfiltered, preserving its natural character.
