WINE MAKING PROCESS
The winemaking process for Mauro Veglio Dolcetto d'Alba begins with de-stemming and soft pressing of the Dolcetto grapes. Maceration on the skins lasts for approximately 7-8 days at controlled temperatures. Fermentation occurs in stainless steel tanks, followed by the completion of malolactic fermentation. Micro-oxygenation is employed to help soften the tannins. The wine is then aged in stainless steel tanks for 6-7 months before bottling.
