ABOUT THIS WINE
Cavallotto Dolcetto d'Alba Vigna Scot 2023 is a red wine from Piedmont, Italy, specifically from the Castiglione Falletto sub-region. It is made from 100% Dolcetto grapes grown in the Vigna Scot parcel, known for its limestone-rich soils. The wine is distinguished by its complexity and structure, which are not always typical for Dolcetto, and its character is strongly tied to the unique vineyard site. Cavallotto is a historic family winery established in 1928, committed to traditional winemaking and organic viticulture, emphasizing minimal intervention to allow the wine to express its natural identity. The 2023 vintage offers a deeply aromatic profile with black cherry and sweet fruit notes.

WINE MAKING PROCESS
The Cavallotto Dolcetto d'Alba Vigna Scot 2023 is produced using 100% Dolcetto grapes. Fermentation takes place in stainless steel tanks with indigenous yeasts and a short maceration period of 3-4 days using a submerged cap technique. Following fermentation, the wine is aged for six months in large Slavonian oak botti (50 hl), followed by an additional six months in cement tanks. The grapes are harvested in the first half of September. The winery employs organic farming practices.
