WINE MAKING PROCESS
Azienda Agricola Enzo Boglietti employs organic viticulture, utilizing only organic products and holding official organic certification. Vineyard practices include short pruning (5-6 buds for Dolcetto) and meticulous canopy management to control yields, with efforts to maintain one bunch per cane and reduce bunch size if necessary. High-density planting is used in newer vineyards, and all grapes are hand-picked. In the cellar, the winery aims to minimize the use of sulfites, fining, and filtration. There has been a conscious reduction in the use of new oak and aging time in oak, alongside diminished extraction during fermentation compared to earlier winemaking approaches.
