ABOUT THIS WINE
Doline Primitivo is a 100% Primitivo from Puglia, Italy, produced by Colli Della Murgia. The wine's name, 'Doline,' references the characteristic sinkholes found in the Alta Murgia Plateau region where the winery is located. This area is known for its rocky ridges and karst topography, with vineyards situated at an elevation of 240 meters on soils composed of marine sediments, clays, and limestone. Colli Della Murgia is a family-run estate with a long-standing commitment to organic farming, holding certification since 1996. Their philosophy for this wine is 'Less is more,' aiming for a modern, accessible, and slender expression of Primitivo that emphasizes freshness and drinkability by foregoing oak aging. The wine is designed as an informal red for everyday enjoyment.

WINE MAKING PROCESS
The winemaking process for Doline Primitivo begins with hand-harvested grapes from Rutigliano in early September. A soft pressing is followed by fermentation in stainless steel tanks for 8-10 days with skin contact, maintaining controlled temperatures. The wine then undergoes malolactic fermentation. Aging is exclusively in steel tanks for 12-14 months to preserve fruit purity, followed by an additional 3 months of bottle aging before release. The total sulfite levels are kept low, around 55-60 mg/l.
