The Berthet-Bondet family founded their estate in 1984, with a focus on traditional winemaking practices and organic viticulture. The wine's distinctive character is a result of its specific aging process under a veil of yeast, a method passed down through generations.

WINE MAKING PROCESS
The production of Domaine Berthet-Bondet Château-Chalon begins with a manual harvest of 100% Savagnin grapes. Following pressing, the wine ferments in stainless steel tanks. The defining characteristic of its winemaking is the extended aging process: the wine matures for six to seven years in French oak barrels. During this period, the barrels are intentionally left unfilled, allowing an oxidative environment to develop under a veil of yeast. This 'voile' protects the wine while imparting its signature complex aromas and flavors. The estate is certified organic.
