WINE MAKING PROCESS
The Domaine Comte Peraldi Rosé is produced using distinct methods for its grape varietals. The Sciaccarellu grapes undergo a saignée (bleeding) process, while other varieties like Cinsault and Niellucciu are direct pressed. The resulting must is fermented in thermo-regulated stainless steel tanks at approximately 16°C to preserve freshness. Following fermentation, the wine is aged in stainless steel vats, ensuring that its primary fruit characteristics and vibrant acidity are maintained. The estate's commitment to organic farming is a fundamental aspect of its winemaking approach.
