WINE MAKING PROCESS
The winemaking process for M. Chapoutier Domaine de Bila-Haut Banyuls begins with hand-harvesting very ripe Grenache Noir grapes. The grapes undergo destemming and crushing, followed by a long maceration period. Fermentation is halted through the addition of grape spirit, a process called 'mutage,' which preserves the natural sweetness. The wine is then aged in vats for a period of 8 to 20 months. This reductive aging is a key technique for the 'Rimage' style, aiming to preserve the fruit's clarity and purity.
