ABOUT THIS WINE
Domaine de Noire Dolia is a 100% Cabernet Franc from the Chinon appellation in France's Loire Valley. The 'Dolia' cuvée is named after the Latin term for terracotta amphorae, reflecting the winemaking technique of aging the wine exclusively in these vessels. This practice, combined with the use of old vines (45-70 years) and organic farming, sets this wine apart. The estate, Domaine de Noiré, was acquired by Odile and Jean-Max Manceau in 2001, who are committed to producing wines that express their terroir. The vineyard soils are primarily 'tuffeau,' a chalky limestone typical of the region.

WINE MAKING PROCESS
Domaine de Noire Dolia undergoes whole-berry fermentation in terracotta amphorae using indigenous yeasts for 30-40 days at low temperatures. Following fermentation, the wine is aged for one year in amphorae on its fine lees. The estate practices manual harvesting and maintains limited yields. Farming is certified organic. The winemaking philosophy emphasizes expressing the terroir through traditional methods and minimal intervention.
