ABOUT THIS WINE
Domaine des Cavarodes was founded in 2007 by Etienne Thiebaud in the northern Jura village of Cramans. Thiebaud, who trained in Burgundy and worked with legendary natural winemakers, has quickly become a cult figure in the natural wine movement. He meticulously farms just 4.5 hectares of vines, some of which are over a century old, using organic and biodynamic methods. The Poulsard de Chemenot cuvee comes from a specific north-facing hillside plot called En Chemenot just east of Arbois, characterized by its unique blue and grey marl soils. This wine represents a pure, unadulterated expression of the Poulsard grape, reflecting the historic traditions and distinct terroir of the Jura region.

WINE MAKING PROCESS
The winemaking process at Domaine des Cavarodes is defined by minimal intervention and meticulous manual labor. The old-vine Poulsard grapes are harvested entirely by hand and carefully de-stemmed by hand. Spontaneous fermentation occurs using only indigenous yeasts. The grapes undergo a very light semi-carbonic maceration with minimal extraction to preserve the delicate nature of the variety. The wine is aged for 12 months in large, neutral French oak foudres and older barrels, with all racking and bottling processes timed according to the lunar calendar. It is bottled completely unfined, unfiltered, and without any added sulfites, retaining a small amount of natural residual carbon dioxide to protect the wine from oxidation.
