WINE MAKING PROCESS
Domaine Drouhin-Laroze employs a winemaking approach that begins with a cold soak for a few days before fermentation. Between 20% and 30% of the grapes are fermented as whole clusters. Following fermentation, the wine undergoes aging for about twelve months in oak barrels, with 80% of these being new. The oak is selected for its light to medium-plus toast levels. After barrel aging, the wine typically spends an additional 3-6 months in tanks before bottling.
