WINE MAKING PROCESS
The winemaking process for Dominio Alto Crianza begins with hand-harvested grapes. The fruit is destemmed and crushed, then undergoes a four-day cold maceration period. This is followed by fermentation and a subsequent ten-day maceration. Malolactic fermentation is carried out in stainless steel. The wine is then aged for 12 months in a mix of 3-5 year old French and American oak barrels. Finally, it rests in bottle for six months before release, adhering to the Crianza designation requirements for Rioja.
