WINE MAKING PROCESS
The winemaking process for Don Melchor 2022 begins with a rigorous double selection of grapes, first by cluster and then by individual berry. Alcoholic fermentation takes place in stainless steel tanks at controlled temperatures between 24-26°C for 8-10 days, utilizing pump-overs. Following fermentation, a maceration period of 5-10 days occurs at 23-25°C to refine tannin extraction. The wine then undergoes aging for 15 months in French oak barrels, with 72-78% being new and 22-28% second-use.
