WINE MAKING PROCESS
The production of Don PX 2003 begins with the meticulous sun-drying of Pedro Ximénez grapes, a process known as 'asoleo,' to concentrate sugars and flavors. Fermentation is initiated after pressing and then halted prematurely through fortification with pure wine alcohol, a technique called 'mutage,' to retain high residual sugar. Following fermentation, the wine is aged oxidatively for over 20 years in American oak casks. This extended maturation period in oak is a defining characteristic, contributing to the wine's complexity and depth.
