WINE MAKING PROCESS
Don Zoilo Amontillado 15 Years Old is produced from 100% Palomino grapes from historic vineyards in Jerez Superior. Fermentation occurs at 22°C after cold decantation, followed by early racking. The wine is aged for an average of 15 years using the traditional Solera and Criaderas system, which involves a dual aging process: first biological aging under flor, then oxidative aging. The wine is bottled unfiltered ('en rama') in its most natural state. As a solera wine, it is a non-vintage blend.
