ABOUT THIS WINE
Manzwine's Dona Fátima is a landmark wine, famous for single-handedly saving the nearly extinct Portuguese white grape variety, Jampal. Located in the small historic village of Cheleiros within the Lisboa region, founder André Manz discovered these old vines almost by accident. Today, Manzwine is the only producer in the world with a certified 100% Jampal vineyard. The wine is named in honor of André Manz's mother-in-law, Dona Fátima, celebrating family heritage and the resurrection of a lost Portuguese treasure.

WINE MAKING PROCESS
The Jampal grapes are hand-harvested from clay-limestone soils in Cheleiros, benefiting from a cool, Atlantic-influenced microclimate. After careful destemming and gentle pressing, fermentation takes place in temperature-controlled stainless steel tanks. To build texture, complexity, and mouthfeel, the wine undergoes aging on its fine lees with regular battonage (lees stirring). A small portion of the blend is aged in French oak barrels to add subtle structure and integration without overpowering the delicate varietal character.
