ABOUT THIS WINE
Dopff Brut Cuvée Julien is a sparkling white wine from Alsace, France, produced by Dopff au Moulin, one of the oldest family-owned wine estates in the region, founded in 1574. The producer is recognized for its pioneering role in establishing the Crémant d'Alsace appellation and popularizing the distinctive Alsatian 'flûte' bottle shape. The wine's designation, 'Cuvée Julien,' pays homage to Julien Dopff, who was instrumental in introducing the traditional method of sparkling wine production to Alsace. The estate, now in its 11th generation of family ownership, is known for its commitment to producing wines in a completely dry style.

WINE MAKING PROCESS
Dopff Brut Cuvée Julien is produced using the Méthode Traditionelle, involving a second fermentation in the bottle. The winemaking process begins with hand-picked grapes that are gently pressed, with only the first pressings, known as the 'Cuvée,' being used. The initial fermentation occurs in temperature-controlled stainless steel tanks. Following this, the wine undergoes its secondary fermentation in the bottle, which is essential for creating the effervescence and developing the wine's characteristic complexity. The wine then ages on its lees for an extended period, a minimum of 18 months for standard bottles, contributing to its texture and aromatic profile.
