ABOUT THIS WINE
The Doppio Passo Organic Primitivo is a red wine from Botter, produced in the Puglia IGT region of Italy, specifically from the Salento sub-region. Its unique identity stems from the 'Doppio Passo' winemaking process, which involves two distinct harvest stages, and its cultivation under organic farming practices. The Botter family, who founded Casa Vinicola Botter in 1928, now manage the winery in its third generation, with a significant focus on international export markets. This wine's story is intertwined with the legacy of its founders and the sun-kissed terroir of Puglia.

WINE MAKING PROCESS
The Doppio Passo Organic Primitivo is crafted using a distinctive 'Doppio Passo' method, which involves two separate harvests. Grapes are hand-harvested first at optimal maturity, and then again at a later stage when they have partially dried on the vine. Fermentation takes place in stainless steel tanks under controlled temperatures. A key step involves a second fermentation conducted on the pomace from the later harvest, a process intended to amplify the wine's intensity. Following fermentation, the wine is aged in stainless steel tanks, preserving its fruit-forward profile. The vineyard practices are certified organic.
