ABOUT THIS WINE
Weingut Weninger, led by Franz Reinhard Weninger, is a pioneering biodynamic estate located in Mittelburgenland, Austria. The name 'Dorfeber' translates to 'village breeding boar,' referencing the historical European tradition where villages shared breeding animals chosen for their health and climate resilience. Weninger applies this philosophy to viticulture by championing Souvignier Gris, a fungus-resistant hybrid (PIWI) variety. This choice represents a shift toward sustainable, non-chemical agriculture. Because regional DAC laws heavily favor traditional red varieties, Weninger bottles this wine under the broader 'Weinland' designation, prioritizing ecological freedom and living wine over bureaucratic classifications.

WINE MAKING PROCESS
The winemaking process for Dorfeber is defined by minimal intervention and biodynamic principles. Hand-harvested in mid-September, the Souvignier Gris grapes undergo spontaneous fermentation with indigenous yeasts in large, neutral 2900-liter oak casks. The wine undergoes full malolactic fermentation to naturally balance its high acidity. It is then aged for seven months on the full lees (Vollhefe) in neutral oak, which imparts a distinct texture and complexity. To preserve its natural character, the wine is bottled completely unfined and unfiltered, with only a minimal sulfur addition of approximately 15 ppm.
