WINE MAKING PROCESS
The Dr Mayer Pinot Noir is crafted using a distinctive 100% whole-bunch fermentation method, employing natural wild yeasts in open vats. The process includes a specific maceration period of 10 days of carbonic maceration followed by 10 days of traditional maceration. Following fermentation, the wine matures for 11 months in French hogsheads, resting on its lees. In line with Timo Mayer's winemaking philosophy, the wine is handled minimally, with only one racking before bottling. It is bottled without fining or filtration to preserve its natural character and texture. Viticultural practices focus on natural farming, with yield management through techniques like shoot thinning and green harvesting.
