WINE MAKING PROCESS
The production of Duval-Leroy Blanc de Blanc Prestige Grand Cru Brut begins with the exclusive use of 100% Chardonnay grapes sourced from Grand Cru vineyards in the Côte des Blancs. Primary fermentation occurs in stainless steel tanks at 18°C with selected yeasts, with approximately 6% of the wine undergoing fermentation in oak barrels to add complexity. Malolactic conversion is utilized to soften the wine. Following this, the wine undergoes secondary fermentation in the bottle, a hallmark of the traditional method for Champagne. It is then aged on its lees for an extended period, with some indications of up to 14 years of bottle aging, contributing significantly to its development and character. The house emphasizes sustainable viticulture and environmental protection throughout its practices.
