ABOUT THIS WINE
Apostolos Thymiopoulos is the visionary winemaker credited with redefining Xinomavro, transforming it from a rustic, aggressively tannic grape into a wine of supreme elegance and transparency. Sourced from old vines in the Naoussa region of Northern Greece, 'Earth and Sky' (Γη Και Ουρανος) represents a masterclass in terroir blending. It combines fruit from the lower-altitude, clay-rich soils of Trilofos (representing 'Earth') with the high-altitude, schist-driven vineyards of Fytia (representing 'Sky'). This duality yields a wine of incredible structural depth, vibrant energy, and aromatic complexity, drawing frequent comparisons to the finest Nebbiolo and Pinot Noir of the world.

WINE MAKING PROCESS
The grapes are harvested by hand from organic and biodynamically farmed old vines averaging 44 to 45 years of age. In the cellar, 40% whole clusters are retained during fermentation to enhance structural tension and spice. Fermentation is carried out slowly over two to three months using only indigenous yeasts, followed by an extended 40-day maceration on the skins. For the 2023 vintage, the wine was aged for 16 months in large French and Austrian oak barrels, of which 25% were new, marking a subtle stylistic evolution toward greater refinement and integrated oak influence.
