ABOUT THIS WINE
Codorníu Ecológica Brut is a non-vintage white Cava produced by Codorníu, a winery with a history dating back to 1551. It is made from Macabeo, Parellada, and Xarel·lo grapes grown in the Penedès region of Catalonia, Spain. This Cava is distinguished by its organic certification, adhering to strict European and US organic farming regulations. The vineyards are located in Alt Penedès and Penedès Central, with low yields cultivated using sustainable viticulture practices. Codorníu's long-standing winemaking tradition, dating back to the 16th century, informs the production of this modern, ecologically conscious sparkling wine.

WINE MAKING PROCESS
Codorníu Ecológica Brut is produced using the traditional method, which involves a secondary fermentation and aging in the bottle. The primary fermentation takes place in stainless steel vats, with grapes harvested separately to ensure organic integrity. Following fermentation, the wine is aged for 9 to 12 months on its lees, a process that develops its texture and complexity. Organic farming practices are central to its production, with vineyards certified under European and US regulations. Low yields are maintained to enhance grape quality. All winemaking products used comply with organic appellation standards, and separate, specially labeled vats are employed to prevent any contact with non-organic substances.
