WINE MAKING PROCESS
The winemaking process for Ecoltura Appassimento centers on the traditional Italian appassimento technique. Grapes are harvested at peak phenolic ripeness and undergo partial dehydration, either naturally on the vine or on specialized racks. This drying process evaporates water, concentrating sugars, acids, and flavors within the berries. Following dehydration, the concentrated grapes undergo fermentation in temperature-controlled stainless steel tanks. To preserve the pure, vibrant primary fruit characteristics of the Primitivo grape and avoid heavy wood extraction, the wine has minimal to no oak contact, resulting in a fruit-forward profile. The final bottling features a traditional 'Spago' closure, where a rustic string is hand-tied over the natural cork.
