ABOUT THIS WINE
Edda Bianco Salento IGP is the signature white wine from Cantine San Marzano, a cooperative founded in 1962 by local vine growers in Puglia, Italy. The wine's identity is rooted in its unique blend, typically featuring Chardonnay alongside indigenous Puglian white grapes like Fiano and Moscatello Selvatico. This fusion aims to capture the essence of the Salento region, known for its significant diurnal temperature variations that foster balanced grape development. The producer's philosophy centers on merging traditional Apulian winemaking with contemporary methods to create elegant wines that express their origin. Edda stands out as a testament to this approach, showcasing a distinctive character derived from both international and local varietals, and a refined winemaking process.

WINE MAKING PROCESS
The winemaking process for Edda Bianco Salento IGP begins with destemming and a brief period of cryomaceration (cold soak) to extract aromatic compounds. Following a gentle pressing and static cold settling of the juice, alcoholic fermentation is carried out in French oak barrels. The wine then undergoes a 4-month aging period on its lees ('sur lie') in these same barrels. Weekly bâtonnage (lees stirring) is performed during this aging phase to enhance texture, complexity, and aromatic depth. The goal is to create a wine that balances richness with freshness, reflecting the unique characteristics of the Salento region and the chosen grape varietals.
