WINE MAKING PROCESS
The Edelspitz Pigèage 2020 is produced using traditional methods at Vinarstvi Spalek. The grapes, a blend of Gewürztraminer and Pinot Gris, are whole-cluster pressed and undergo a 10-day maceration process known as 'Pigèage,' which involves treading the grapes. Fermentation is carried out with native yeasts, without the addition of enzymes or cultured yeasts. Following fermentation, the wine is aged in oak barrels. The winery's vineyards are farmed organically and partly biodynamically, reflecting a commitment to sustainable practices and minimal intervention in both the vineyard and cellar.
