WINE MAKING PROCESS
The Nivarius Edición Limitada 2019 is produced through gentle pressing of the grapes without destemming, conducted in the absence of oxygen. Fermentation occurs in French oak barrels or wooden vats at controlled, low temperatures. Following fermentation, the wine is aged for 9 months on fine lees in French oak barrels. It then undergoes a further 20 months of bottle aging before its release. The vineyards are managed using sustainable methods and organic products. The harvest is manual, with grapes collected in small boxes.
