ABOUT THIS WINE
Eduardo Torres Acosta, a native of the Canary Islands, moved to Sicily in 2012 and quickly became one of Mt. Etna's most exciting natural winemakers. 'Versante Est' (Eastern Slope) showcases the unique terroir of Etna's eastern flank, where high-altitude vineyards on volcanic soils yield wines of incredible tension and mineral depth. Eduardo works strictly with traditional, low-intervention methods, renting small, parcel-sized vineyards from local farmers to preserve the island's viticultural heritage.

WINE MAKING PROCESS
Hand-harvested grapes undergo spontaneous fermentation with indigenous yeasts in concrete tanks and used oak barrels. The wine typically sees a short period of skin contact, adding texture and complexity, followed by aging on its fine lees. Unfined, unfiltered, and bottled with minimal sulfur additions to preserve the raw energy of the volcanic terroir.
