WINE MAKING PROCESS
Eight Knot Touou Junmai is produced by Murashige Sake Brewery using Saitō Shizuku rice, polished to 60% of its original size. The vinification involves a three-stage fermentation process, followed by an extended fermentation at around 10 degrees Celsius. The sake has also undergone malolactic conversion.
