El Bandito Cortez is a single-varietal Chenin Blanc from the Swartland region of South Africa, produced by Testalonga. Founded by Craig and Carla Hawkins in 2008, Testalonga is known for its minimal intervention, organic farming, and dedication to expressing terroir. The 'El Bandito' range, including Cortez, reflects a rebellious spirit and a commitment to natural winemaking, often challenging traditional classifications. The vineyards are situated on decomposed granite and sandstone soils, with the Cortez vineyard specifically noted for its high quartz content, contributing to the wine's distinctive saline character. WINE MAKING PROCESS
El Bandito Cortez is produced using minimal intervention techniques. Grapes are hand-harvested at precise acidity levels. Fermentation occurs spontaneously with indigenous yeasts in neutral vessels like old French oak foudres and used barrels. The wine undergoes aging in these same neutral vessels to allow for slow development without oak influence. It is bottled unfined and unfiltered, with only a small addition of sulfur dioxide before bottling. The vineyards are farmed organically and are dry-farmed, relying on natural rainfall and cover crops for soil health.
