ABOUT THIS WINE
El Canto de la Alondra 2021 is a 100% Tempranillo red wine from the D.O. Ribera del Duero in Spain. It is the personal project of winemaker Silvia González García, who began this endeavor in 2014 with a focus on limited production from old vines. The grapes are sourced from a single vineyard situated at a high altitude of 880 meters in Olmos de Peñafiel, known for its calcareous soil. This project aims to craft a unique and high-quality wine that reflects its specific terroir.

WINE MAKING PROCESS
El Canto de la Alondra 2021 is produced from hand-harvested Tempranillo grapes. Fermentation is carried out with indigenous yeasts for 10 days at controlled temperatures below 28°C, with techniques like pump-overs and délestage employed for extraction. Post-fermentation maceration lasts for 12 days, followed by spontaneous malolactic fermentation. The wine then undergoes 12 months of aging in a mix of French and American oak barrels, with periodic stirring on lees. Natural stabilization and clarification are achieved using a vegetable-based clarifier.
