WINE MAKING PROCESS
The winemaking process for Jimenez Landi El Corralón 2022 begins with hand-harvested grapes. A cold pre-maceration is employed for four days, followed by fermentation with indigenous yeasts in temperature-controlled stainless steel tanks between 15-25°C. The blend includes both whole clusters (35%) and destemmed grapes (65%), with macerations lasting 20 to 30 days. Gentle extractions are achieved through pumping over. Following fermentation, the wine is aged in French oak barrels and large oak foudres.
