WINE MAKING PROCESS
El Escolladero is produced by Bodegas y Viñedos Artuke using grapes from a single vineyard. The harvest is manual, with grapes collected in small boxes. Following harvest, the grapes are manually destemmed. Fermentation takes place in micro-tanks of 2,000 kg capacity. The wine is then aged for a period of 12 to 16 months in French oak barrels. Some winemaking details suggest the use of biodynamic principles in viticulture and respectful vineyard management.
