ABOUT THIS WINE
El Grifo Rosado de Lágrima is a rosé wine from the D.O. Lanzarote in the Canary Islands, Spain. It is made exclusively from the Listán Negro grape variety. The wine's name, 'de Lágrima,' refers to the method of using only the free-run juice, obtained with minimal pressure, to capture the grape's essence. The grapes are cultivated on ancient, ungrafted vines rooted in Lanzarote's unique volcanic soil. These vineyards are protected from harsh winds by traditional volcanic rock walls, a practice known as 'heroic viticulture.' Bodegas El Grifo, the producer, is the oldest winery in the Canary Islands, founded in 1775, and is known for its commitment to showcasing the distinct character of its volcanic terroir.

WINE MAKING PROCESS
El Grifo Rosado de Lágrima is produced using the 'de Lágrima' method, which involves collecting only the free-run juice from the Listán Negro grapes with minimal pressing. The grapes are hand-harvested to ensure their quality. Fermentation occurs in stainless steel tanks at controlled temperatures, typically around 17°C, to maintain freshness. Following fermentation, the wine is quickly racked and spends less than a month on its fine lees to enhance its texture. The wine is then clarified and filtered efficiently.
