WINE MAKING PROCESS
Crafted entirely from 100% Bobal grapes, the winemaking process focuses on preserving the delicate primary fruit aromas and achieving a pale, elegant color. Upon arrival at the winery, the grapes are chilled to prevent oxidation. A very gentle pressing is applied to extract only the premium free-run juice (mosto flor), avoiding harsh tannins and excessive color extraction. Fermentation takes place at low, strictly controlled temperatures in stainless steel tanks. The wine is then kept briefly on its fine lees in stainless steel to build mid-palate texture and volume before bottling, without any oak contact.
