WINE MAKING PROCESS
El Molar is produced using 100% Garnacha grapes. The winemaking process begins with a precise destemming, followed by spontaneous alcoholic fermentation with native yeasts in underground stone winepresses at temperatures between 30-32°C. Malolactic fermentation is completed in foudres. A portion of the wine, up to 50%, may undergo partial whole cluster fermentation. The wine is then aged for 14 months in a combination of 500-liter oak barrels, 5,000-liter foudres, larger neutral barrels, and concrete tanks. The grapes are sourced from vineyards farmed using certified organic practices, and the harvest is conducted manually.
