ABOUT THIS WINE
El Paisano de Tares 2023 is a red wine from the D.O. Bierzo, produced by Dominio de Tares. Its distinctive identity comes from an unusual blend, primarily Mencía, with the inclusion of Garnacha Tintorera, Godello, Doña Blanca, and Palomino Fino. The wine is described as embodying a return to the origins of Bierzo winemaking, offering a timeless and rustic character. The producer, Dominio de Tares, is known for its commitment to terroir-driven wines and minimal intervention, acting as guardians of ancient winemaking traditions. The vineyards are located in Bierzo Alto, Spain, at altitudes reaching up to 700 meters, with soils composed of clay, limestone, slate, and schists. The 2023 vintage notes mention a rainy spring and mild temperatures, leading to an early harvest before significant September rains, contributing to an elegant and fresh profile.

WINE MAKING PROCESS
El Paisano de Tares 2023 is produced using hand-harvested grapes, which are foot-trodden with stems. The fermentation process is spontaneous, utilizing wild yeasts from the vineyard and winery, and lasts for 40 days at 20°C. Gentle maceration is employed, followed by a natural, spontaneous malolactic fermentation. The wine is then aged in old oak 'cubetos' (vats). Minimal intervention filtration and bottling by gravity are also part of the winemaking process.
