WINE MAKING PROCESS
The winemaking process for Elio Grasso 'Gavarini' Langhe Nebbiolo begins with a manual harvest in early October. Alcoholic fermentation occurs in temperature-controlled stainless steel tanks, with daily pumping over to enhance extraction. Malolactic fermentation is completed, followed by aging solely in stainless steel until bottling in April or May. This approach is designed to highlight the purity of the Nebbiolo fruit.
