WINE MAKING PROCESS
The grapes for the 2013 Elodian Cabernet Sauvignon were hand-harvested between September 9 and October 11, 2013. The fruit underwent warm-temperature fermentation at 82–84°F (27.7–28.8°C) to optimize the extraction of color, aromatics, and structural tannins. Following fermentation, the wine was aged for 28 months in 100% French oak barrels to integrate the complex components and soften the mountain-grown tannins. The final blend consists of 75% Cabernet Sauvignon, 21% Syrah, 2% Malbec, and 2% Petite Sirah, and was bottled in August 2015.
