ABOUT THIS WINE
Encinas Bierzo 2021 is a red wine from the Bierzo DO in Spain, produced through a collaboration between Antoine Graillot and Raúl Pérez. The wine's name, 'Encinas,' translates to 'oak' in Spanish. This partnership merges the winemaking philosophies of the Northern Rhône and Bierzo, utilizing the region's unique terroir. Grapes are sourced from old vines in Bierzo, a region known for its ancient Mencía plantings and varied soils. The winemaking process itself is a notable aspect, with the installation of a concrete fermentation vat requiring structural modifications to Raúl Pérez's winery.

WINE MAKING PROCESS
The Encinas Bierzo 2021 is produced using whole-cluster fermentation, often conducted in concrete vats, a technique influenced by Northern Rhône practices. Extended skin contact is also utilized. Following fermentation, the wine undergoes aging for around 10 months in neutral French oak foudres or large oak tanks. Viticulture is described as practicing organic and organically farmed, with grapes hand-harvested from old-vine sites. The winemaking emphasizes the expression of the Bierzo terroir and the Mencía grape.
